So I stumbled on a healthy chocolate recipe a couple weeks ago. I found it at Chocolate Covered Katie's site, where she specializes in making desserts healthy. Her recipe for Chocolate Frosting Shots looked amazing! I had to try it. The recipe is pretty simple and you can get it here. But basically it calls for full fat canned coconut milk, cocoa powder, vanilla, and a little sweetener(I used Truvia). So I made it this weekend, but I accidentally picked up the low fat version of canned coconut milk. It tasted good, but it wasn't working for a frosting. It didn't have the same look or texture as frosting. So there I was trying to figure out how to salvage the recipe when I thought of something...

The low fat coconut milk didn't get thick enough for frosting, but was the perfect consistency to freeze. So I poured my "frosting gone wrong" concoction into a Popsicle mold and was very pleased with the results. Next time I will add a little more sweetener to cut through the bitter in the cocoa. Now I can't wait to try this recipe with the right ingredient. But I think I found a new healthy summer treat, because the boys loved it!
